Bit o' Cooking: Crockpot ChexMix... seriously!

Good morning, all -

Thought we'd take a peek at a recipe I tried for a family favorite snack, cooked a different way: ChexMix in the crockpot!  I know - crazy, right?


Here's my recipe. I used handfuls of each - VERY exact science...hahaha!

Carrie's Crockpot ChexMix


For mix:
  • 1-2 cups Cheerios
  • 1-2 cups Crispy Hexagons
  • 1-2 cups corn Chex
  • 1-2 cups pretzels (mine were large, so I broke them up to bite size pieces)
  • 1 cup cinnamon cereal
  • 1 cup sesame sticks
  • 1/2- 1 cup peanuts
  • 1/2 - 1 cup cashews
For seasoning:
  • 2/3 cup butter/margarine
  • 4 tbsp Worchestershire sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp seasoned salt
  • 1/2 tsp sugar

Pour all your mix ingredients into the crockpot till it's about 3/4 full.  Amounts of mixture will vary due to crockpot sizes.  Stir.

Add butter to a small sauce pan and melt.  Add the rest of the seasoning ingredients and heat till they dissolve.

Remove from the heat and  pour over the mixture in the crockpot.  Stir till as much as possible is coated.

Cover and cook on low heat for 2 1/2 hours - stirring every half hour or whenever you think of it.  After 2 1/2 hours, turn off heat, let it cool and then put in air tight containers or a giant bowl to munch.

NOTES:

  1. I was worried it would be mushy and it was a bit soft when the 2 1/2 hours ended, but it was fine after it cooled a bit and totally yummy the next day.
  2. The next time I make it I think I will spray the bottom of the crockpot - overall it was easy to clean, but there was some stuck after the cooking.  
There you go!  This is perfect for a "busy in the kitchen" time, or if your oven is in use and you need to make this!  Pop it all in the crockpot and voila!
